AI Food Waste Trackers Help Hotels Avoid Tons of CO₂ Emissions

AI tools like Winnow’s are helping hotels cut carbon and costs at the same time. The real question is how quickly the rest of the industry will catch up if regulations start forcing their hand.

AI smart scales that weigh food waste at Accor, Hilton, Marriott, and Mandarin hotels have helped cut 122,000 tons of CO₂ annually, according to data from Winnow, the firm behind the smart scales.

That’s about the same as taking 28,000 fossil-fuel based cars off the road for a year.

Winnow told Skift that tracking in this way can cut emissions from food waste by around 50%.

“Winnow’s data show most professional kitchens waste 5–15% of purchased food; tracking typically cuts this by 50% or more and cuts purchasing costs by 3-8%,” a spokesperson said, estimating that companies using the scales have together saved more than $100 million per year.
